  • – 200ml meat jelly

Instructions

1. Remove the foie gras from the fridge one hour before cooking to soften. Carefully devein it by removing visible veins.

2. In a bowl, season the foie gras with salt, pepper, and cognac; mix gently to combine.

3. Preheat the oven to 120°C (248°F). Pack the mixture tightly into a terrine mold.

4. Bake in a water bath for about 40 minutes, until the internal temperature reaches 55°C (131°F).

5. Let cool at room temperature, then cover and refrigerate for at least eight hours before serving.

6. Before serving, top with warmed meat jelly for added flavor and shine.
